NUTRITION: On a vegan mission

This week my and my family went Vegan, well mostly! My wife watched a program called Game Changers on Netflix and then What The Health and she immediately went Vegan. It was following the brief chat with a local nurse who advised she might need to go on medication for the rest of her life, after nothing more than just hearing about her family's health history. She was so disappointed the medical practitioner would advise this before even getting the test results back, that she thought 'right its time change up my diet and keep control of my health!'


After watching Game Changers myself I was immediately in! And since then I've been determined to cook meals that appeal to all the family. Granted the kids are in a trial period - they've so far mainly bought in to being vegetarian and a bit of meat when out, which is fine.


It hasn't been a hard decision for me. I was previously veggy for 5 years, although that was 20 years ago now, well I was more like pescatarian. So it feels natural and right timing and somewhat a relief not having to deal with or prepare meat anymore.


Its also been easy due to health grounds. In the last 2 years I've been gluten free and mostly dairy free. I've also got really good at cooking authentic Gujurati/Indian food with fresh ginger, garlic and chilli and turmeric and Indian spices. All of which helps down inflammation in the body, that is so often associated with dis-ease like autoimmune conditions. In my case psoriasis. Over 2 years I also got rid of 10 uncomfortable symptoms linked to psoriasis and stress. We are what we eat. When we change our internal environment we change the health outcomes.


Nutrition as well as fitness, rest, brain training and letting go of in inner negative energy/unresolved emotions through Havening have been my ingredients to improving my physical wellbeing.


We also have the climate emergency theme which has made this decision a noo brainer! If it wasn't already! Gretta Thornberg said it herself in a recent interview, one of the best things we can do is go vegan, as she has done.


So decision to be 100% in on this vegan mission I've been getting creative. I'm committed to making our vegan meals taste even better than our meat meals ever did. Sounds like a tough challenge right!? You wouldn't be alone in thinking that but I've already started to break that myth down with the following meals. Only towards the end of the week have I decided to start taking photo's which is more weekend type food.

Quinoa and brown rice burgers, gluten free burger baps and salad

Gluten and dairy free pesto and pasta with Vegan chicken and salad


Wednesday

Black bean soup with smashed avocado and vegan Alpro soya yogurt


Thursday

Refried black beans with double baked smoked tofu and roasted butternut squash


Friday

Sweet potato oven cooked fries

Curried mash potato with spicy baked cauliflower and chicken peas, spinach and home made pickled red onion in

Gluten free/vegan pancake wrap Refried Black beans with Baked Sweet potato, peppers and onion topped with red cabbage and coriander slaw


Saturday

For Brunch: Garlic mushrooms, chilli pocorino tomatoes, spinach, avocado and rocket on sourdough toast



Fro Dinner: Take away vegan curry


Sunday

For Brunch: Veggy Sausages, Garlic mushrooms, spicy paprika pocorino tomatoes, pickled gerkin, rocket on sourdough toast.




For Dinner: Quinoa and brown rice burgers with home made coleslaw, rocket and melted vegan cheese in pan fried sourdough bread
